Blueberry Mint Lemonade Slush

It's not big news to say it's been a hot summer here in New England.  It's hot.  Oppressive, even.  I'm not particularly keen on hot days--I'm more of a spring or autumn gal.  But, as much as I'd like to, I can't just huddle inside buildings with air conditioning.  I feel compelled to bring the kids out from time to time.  Which is why you'll find me at zoos or amusement parks or blueberry patches on 95 degree days, when I'd much prefer to be hiding in a cave (note:  I took the kids on a cave tour two weeks ago.  Half of which required walking around outside on a 90+ degree day.  The inside part of the tour, though, was a nice place to recover.  I hated to leave!)

When it gets too hot, I like to make a cold drink.  While blended coffee drinks have long been my go-to favorite, they're not exactly kid-friendly.  So I decided to make a lemonade slush the kids and I could all enjoy.



As I mentioned in my last post, I recently took the kids blueberry picking (yes, when it was over 90 degrees out!), so this recipe continues with my trend of throwing some of the 6 and a half pounds of blueberries we picked into nearly everything I make.  But no worries, blueberries go great with lemonade, so it's a good match.

And let me explain why I'm throwing mint in everything.  I have a lot of mint in my garden.  Well, that was a shorter explanation than I thought I'd need.  Oh yeah, and I really like mint.  That's the other reason.  But if you aren't faced with an overabundance of mint and/or you aren't particularly a mint fan, feel free to leave it out.

I like my slushy drink thick enough to eat with a spoon.  You could make yours more of a drink by adding more water/using less ice.  Or do what I do:  start out with a thick slush and bring it outside.  Before you know it, it'll be largely melted!

Ingredients:

  • Lots of ice
  • 1/4 cup lemon juice (or more to taste)
  • 1/4 cup sugar (or more to taste)
  • 1 cup water (or more or less to taste)
  • 1 cup frozen blueberries (it's okay to use fresh if that's all you have.  As soon as I pick blueberries, I throw a ton in the freezer as we mostly use them for smoothies so we always have plenty of frozen blueberries)
  • Couple of mint leaves (maybe 10 or so)

Directions:

Fill your blender about 3/4 full with ice.  Add all the other ingredients.  Blend until slushy.  You'll probably have to stir it a few times between blending.  If it's too thick and the ingredients just aren't getting pulled into the blade, add some more water, 1/4 cup at a time.

Taste and adjust lemon or sugar quantities to make it more tart or sweet, if necessary.

Blueberry Salad Dressing

The kids and I went and picked 6 and a half pounds of blueberries yesterday.  It didn't even take long, the picking was that good. 

Oh, I'll make blueberry pie, and blueberry muffins, and blueberry pancakes, and blueberry smoothies.  Not to worry!  But we'd just picked up our CSA share and had a huge head of lettuce, not to mention other salad fixin's.  So salads it is for the next few days.

I've been trying to make more of my own salad dressings. I've found a couple of really great HFCS-free, artificial color- and flavor-free options for salad dressing at the grocery store.  But, it's just so easy to make salad dressing.  And I can jazz it up how *I* like it.  And only make enough for a day or two, instead of having bottles sit in the fridge for months.

It's quick, easy, and delicious.  The hardest part is cleaning the food processor after dinner!



Ingredients:


  • 1/2 cup blueberries
  • Zest and juice of 1 lemon (remember to zest the lemon BEFORE cutting and juicing!)
  • 1 Tablespoon apple cider vinegar
  • 1 Tablespoon agave nectar
  • ~4 or so mint leaves
  • 1/4 cup olive oil
  • Salt to taste (optional)

Directions:

Add the blueberries, lemon zest and juice, apple cider vinegar, agave nectar, and mint leaves to a food processor.  Blend it all up.

Drizzle in the olive oil while continuing to food process.  Stop when it's salad dressing-y.

Serve over the salad fixin's of your choice (I had lettuce, arugula, cherry tomatoes, and radishes from our CSA, plus some avocado and sunflower seeds.  Then I threw in a handful of extra blueberries--believe me, with 6 and a half pounds in the house, I'm putting blueberries with every meal!)

Blueberry cake with streusel topping


I love blueberry season. My kids love to go blueberry picking. I love to go blueberry picking. We pick TONS, and freeze them to use all year long.

While we were recently out of town, my mother-in-law stopped in to check our mail for us. While she was here, she left a section she'd pulled out of the Boston Globe about blueberry cakes. Hmm, I'm game! I tried their winning recipe for a blueberry cake with streusel topping. It sure was a winner--absolutely delicious, and it will certainly be something I make each blueberry season.

I followed the recipe exactly, so I'll just include a link here. Well worth a try!

Apple Peach Blueberry Pie

Quick, it's that magic time of year when you can get fresh, local apples, peaches, and blueberries. And there's nothing better than Apple Peach Blueberry Pie.

I created the recipe for Pi Day this past year, expanding upon my mom's delicious apple pie recipe. And let me tell you, while I loved this pie in March, it's a million times better with ingredients fresh off the tree!



Here's my recipe for Apple Peach Blueberry Pie:

Ingredients:
6 to 8 apples (I like to use a variety of types, larger sized apples. If you use small apples, peel more like 10 to 12)
2 or 3 peaches
2/3 cup of blueberries
1/2 cup sugar
1/2 cup flour
1 teaspoon cinnamon
1/2 teaspoon nutmeg
2 tablespoons of butter (optional...I almost always forget it!)
2 pie crusts (make your own or buy from the refrigerator section...I won't tell!)

Directions:

Peel apples and peaches and thinly slice into a large bowl. Add blueberries, sugar, flour, cinnamon, and nutmeg. Stir gently to coat and let sit for at least ten minutes.

Preheat oven to 425 degrees.

Place bottom pie crust into pie plate. Add all of the filling. Cut up the butter and dot around on top of the filling. Top with second pie crust. Cut vents in top.

Place aluminum foil around the edges of the pie to prevent burning. Bake for 30 minutes. Remove aluminum foil and continue baking an additional 10 to 20 minutes until the pie is nicely browned.

For all you locals, we went to Parlee Farms to pick fruit. They are reasonably priced (we spent $39 for a peck of stone fruit and a 1/2 bushel of apples...over 30 lbs of apples, peaches, nectarine, and plums!) And, it's a lot of fun for kids with a hay ride out to the orchards, a small farm animal area, and a hay maze. They also have a nut-free bakery. It was such a joy to be able to buy a cookie for my son with nut allergies. And if that's not enough, they even had local fall strawberries in their farm stand. Local strawberries! In September! Yum.

Figured I'd pass along the recommendation since we had such a great time!

Berry Berry Cherry Bleu Burgers

While we were in Buffalo, we visited what was quite possibly the very best fruit picking farm in the whole country. Okay, fine, I haven't been to very many fruit picking farms, but the one we went to was really great. If anyone is ever in Western New York, check out Brown's Berry Farm. While there we picked vast quantities of sweet cherries, blueberries, and raspberries.

We ate them plain, I threw them in breakfasts, desserts, you name it. But in the back of my head, I'm still pretty intrigued by the meat/fruit combo I mentioned the other day. So as I was searching around for berry recipes, I was immediately captured by a few recipes that mentioned adding blueberries to burgers.

Okay, I'm game. But I wanted to use all the fruit we picked. And there was some bleu cheese left in the cheese drawer. I love bleu cheese and fruit. I love bleu cheese on burgers. Hmmmm...

I think it's time to create Berry Berry Cherry Bleu Burgers!

Here's what I did:

Ingredients:

1 lb ground beef (I think I had more like 1.25 lbs)
1/3 cup blueberries
1/3 cup raspberries
1/3 cup pitted cherries
Crumbled bleu cheese

Directions:

In a large bowl, use a potato masher to coarsely mash the blueberries and raspberries. Finely chop the pitted cherries and add to the bowl.

Add the ground beef to the bowl and mix. I used my hands to really get it mixed up.

Form a very thin, flat patty. Add a generous amount of blue cheese in the center. Top with another thin, flat patty and mush the sides together until it's sealed.

I made 3 regular sized burgers and 2 mini-burgers for my kids. Your mileage my vary depending on how large you like your burgers to be.

Grill to taste, then top with additional cheese if desired.

And here's what it looked like after we were done cooking.


It just looks like a regular burger, doesn't it? I really loved the berries mixed in. It added a little sweetness and a lot of juiciness. The burgers weren't dry at all. I thought it was a definite improvement over a plain burger. But TK wasn't quite as convinced. He didn't dislike it, but said he'd prefer a normal burger in the future. Oh well, you can't please them all. Or in this case, anyone but me as the boys didn't even try it.
